Or, butter, garlic, lemon juice and dill with some fresh salmon fillets chunk of alder on the charcoal for a great smoke flavor and cooked until flesh is just firmed up.

Since it's an election year I'm voting for trying that salmon/dill method as soon as I return from POW! Can I bring alder home on the plane? There is no magic in alder, damn good smoke, but mild and easy to match with maples, a little apple, or beech.

I've used the compound butter with halibut, it was excellent. The thing with good fresh fish is you really don't need to add much seasoning to it: salt, pepper, bit of lemon or lime and you're gtg. Also try adding some sesame oil, love that stuff but don't get carried away. Shouldn't be a problem bringing alder on the plane. For me it's just as much the smell of alder as the taste, and to me it's one of the best smelling woods to burn. I'm kinda partial to these guys in the summer. When fresh off the boat isn't fresh enough

Any fresh ocean/estuary prawns do not suck. Grew up eating fresh ocean king & tiger prawns & the smaller, but sweeter, banana prawns from the estuaries on the east coast of Queensland. Cracked black pepper, squeeze of fresh lemon & buttered white bread ='s treasured childhood memories. Same treatment for the succulently sweet blue swimmer crab sammiches !!

This curried shrimp recipe is a good one, made some last week: http://allrecipes.com/recipe/205544/indian-shrimp-curry/I make a few tweaks, fresh ginger, bump the coriander to 1/2T and add 1/2T cumin.

Wrapped and cooked over charcoal or in the oven til bacon is crisp? Can be done either way. Those were in the oven, under the broiler. These were from the thick shoulder section of some larger Walleye fillets. Cut into "roughly" round, bacon width pieces.
The bowl of fish pieces with minced garlic . . Combined and then simply cooked in a pan/skillet til done?Fish & shrimp par cooked in skillet with butter, then sauce (President's Choice Thai Yellow Curry) added & finished in same skillet.

head to the nearest body of water and commence baiting your hook with a live cricket. cast out and watch the bobber. fill the cooler with bream and catfish: clean 'em and bread with cornmeal seasoned with salt and pepper. into the hot grease: plate with some coleslaw, beans and fresh green onion with a slice of white bread:
