I like them grilled, then drizzled with a bit of bourbon/maple syrup, and a pinch of cayenne pepper on top.

Ice cream is optional. Or just with a pile of roast pork.

Oh yeah...grilled peaches are great. Especially, when used in a peach, pineapple, mango, cilantro, lime and red onion salsa as a fish topping. Probably good on pork as well.

Sounds great! I've a pile of rockfish in the freezer that might end up grilled with a spicy fruit salsa to go with.

I was talking with a distant Cousin just the other day about fried peach pies. He said that His Aunt, which would have been my Dads first Cousin, made fried pies out of the peach peelings. Also said that His wife had the recipe and that you could not tell them from a regular peach fried pie, after they are cooked. Those old timers wasted nothing. miles

Fried pies out of dried peaches are my all time favorite. When I was a boy we had some peach trees and dried a lot of the fruit. Also apples. I can't raise peaches here now, for the brown rot. I have spent a lot money on fungicides with no results. Finally pulled up the trees. miles

Peel peach. Remove the pit. Eat.

Also, peaches CAN well and last forever!!!! You can also freeze them with proper prep.

The following is a peach cook my wife did smoking on the grill 4 years ago.

I got this recipe from a friend and just knew I had to try it on the grill cooking indirect!

Cheesecake Stuffed Peaches
- 6 peaches, halved and pitted
- 1/4 cup butter, melted
- 3 Tbsp cinnamon-sugar
- 8 oz. cream cheese softened
- 1/4 cup sugar
- 1 egg yolk
- 1 1/2 tsp vanilla
*Cinnamon - sugar = 3 Tbsp sugar and 1 tsp cinnamon
350º for 30 minutes

Take each half and slice a little of the bottom so that the peach will sit flat.

Dip each peach half into the melted butter to coat. Arrange peach halves, cut sides up, on pan.

Sprinkle cut sides with cinnamon-sugar.

In mixing bowl beat cream cheese on medium speed until smooth. Add sugar, egg yolk and vanilla. Beat until combined. Spoon cream cheese mixture into peach centers.

Once cooked I topped with chopped walnuts and caramel sauce.
