I'm looking to replace my cutting board with something better. What should I be looking for? Wood types? Thicknesses? Best sizes? Good places to buy from? This is for use on my countertop. Thanks for your help.

End grain maple, walnut, cherry, alder, etc.
Laid out brick pattern with 2' min thickness.
Finished with a compound mixture of food grade mineral oil and bees wax.

end cut Maple, and thick. Best thing ever. Boos makes some good ones. I use one my son made over 30 years ago.

BP, I have gotten a couple of these from the original owner before he sold the business - he mentored his replacement The quality appears to remain high and now hails from TX. http://www.theboardsmith.com/

Plastic is more sanitary; easier to keep clean. All my rifle stocks are wood too. Life is to short to hunt with ugly guns and use plastic cutting boards. BP...

Plastic is more sanitary; easier to keep clean. On the contrary, plastic is less sanitary and more apt to trap contaminants when it gets cut up. Wood has natural anti bacterial properties. Wood is also gentler on your knife so it stays sharp longer. http://faculty.vetmed.ucdavis.edu/faculty/docliver/Research/cuttingboard.htmThe only advantage of plastic is you can throw it in the dishwasher. I do like UHMW for filleting fish as I'm constantly hosing it down to get rid of the fish slime and a wood board would get water logged and damaged. But for kitchen use, give me wood.

You are correct. It is the tannins in the wood which are the primary antibacterials.

I've been using the same rock maple board for 30 years and see no need to spend a C note or more on another board to keep up with the Jones family.
Bought a 24X36 HDPE a few years ago to fit an area of my counter and love the darn thing. Has lived up to a chit ton of chopping and general culinary abuse with minuscule markings.
Hit it with some Star San or water/bleach mix and we're rollin'.
