Wood ducks are a favorite.

Filet out the breast and remove skin. Cut across the grain into 1/4" strips. Put them in a bowl and add Worcestershire sauce and roasted garlic powder (Penseys) and whatever else you think you would like.

Get a cast iron skillet and add bacon grease or oil. The skillet should be about smoking hot and toss in the strips. Stir them around for a minute or 2 and they are done.

Serve over couscous or my favorite; in a soft fajita with fried peppers and onions.

Fresh wood duck breast is a treat!
