Every April, I help my brother in law cook for around 100 retired FBI agents and their wives. This year, I cooked 30 pounds of catfish, and hushpuppies. The folks all bring a side dish, and drinks, beer and what not are provided. Perfect weather, and great people. Event held at one of the retired fellows horse ranch south of The Villages. I really enjoy doing this every year. Great outdoor setup Sam!!!!!
I want one....well I sort of have one but it's not at my house. Rather my Dad's ranch!

What type of oil, recipe for breading, and puppies? I used Zatarains Crispy Southern Fish Fry breading. LouAna Peanut oil. One of the retired agents, a lady, brings the hushpuppy batter. It's her Mom's recipe, and she wont share. Darn it. I cook the catfish at 350F, and the hushpuppies at 365. I use a digital thermometer to monitor the heat.
