I got a good meat market close where I can get my chops custom cut to desired thickness. I know how to cook them...ie make the pocket...stuff...sear the outside in a pan then transferr to oven...what I don't have is a good stuffing recipe itself. I'd like to know if anyone has any good ones...I know they vary some to from the sweet to the spicy...so whatever you have to offer would be much appreciated!

I hope I'm not insulting your pork chops but some of the Stove Top Stuffing mixes are pretty darn good with some creative seasoning added.We use a lot of Adobo seasoning in our house.Try it.

I have stuffed them with a mixture of chopped onions, celery, apples, raisins, and fresh sage leaves. This gives you a good blend of savory flavors, and the sweetness of the apples and raisins.
I first rub the interior of the pocket with a mixture of black pepper corns, kosher salt and garlic cloves, that I grind to a paste using a mortar and pestle. By smashing the peppercorns, you get a more intense flavor from them. That same mix is killer when rubbed on a venison tenderloin.
I don't like a lot of bread or stuffing for this use.

I cook up some spicy sausage (Bob Evans hot). Then I crumble in corn bread and add a little Olive oil, chicken stock, thyme, S&P with brunoise of celery, onion and red red bell peppers. Schhhtuff the chops and bake.

We like home made stuff pork chops to this recipe. We use any box stuffing to your taste such as Stove Top. The first thing to do is to not only order a thick chop but one that has a large loin section as this is more tender.

Cut the chop of course and stuff it high and then lay them on a rack in a pan and bake them. Its important to protect the stuffing and the loin side with aluminum foil as they will cook much faster than the meat on the other side of the loin near the bone.

Armour has a select chop thats better than most. As far as I know there is no grading on pork like there is on beef but I would go for the Armour brand when I could.


All guns should be locked up when not in use!

Thanks, very good suggestions. Mannlicher a local meat shop sells stuffed chops and just like you uses no breading in his mix. I just don't want to buy pre-made.

brown your chops in the skillet, place in oven pan ,we use stove top stuffing then cover with golden mushroom soup. bake.
