back in my restaurant days, we made our own dressings. The two most popular were a honey mustard, and a poppy seed.

Salad Dressings
Boston Seafood Recipes

Honey Mustard

Add to Blender in the following order:
� cup white vinegar
� cup honey
2 Tbls. Dijon Mustard

Blend a few seconds

Slowly add two cups Wesson oil. Gradually increase blender speed as dressing thickens.


Poppy Seed Dressing

Add to blender in the following order:
� cup white vinegar
1/3 cup diced onion

Blend until onion is pureed with the vinegar

Add:
2 Tbls poppy seed
1 Tbls dry mustard
� cup sugar

Blend until well mixed.

Add:
Two cups Wesson oil, slowly, and increase blender speed as the dressing thickens.

I have found the basic rule of 3 to 1 for oil to acid to be a good one. I like to mix extra virgin olive oil and canola/veg. oil. I find using all olive oil to be too bitter.

Dave's Balsamic Vinaigrette

3 parts oil (olive oil/veg oil)
1 part balsamic vinegar
A few good dashes of Worcestershire sauce
1-2 teaspoons Dijon mustard
1 tsp dried basil
Fresh ground pepper
I clove diced garlic
~ 1 tbsp real maple syrup or honey
1 - 2 tsp. anchovy paste

I actually don�t measure anything, but just eye it up. You can omit the anchovy if you wish but it adds a great layer of flavor. Add more or less maple syrup or honey to your liking. I hope you like it.

This is my Mother's recipe. She used to keep it made up all the time. As my note says, this dressing is what made her pimento cheese taste so good. I hope you enjoy as much as our family has. This and over 300 other family comfort food recipes will be in my cookbook "Red Eye Gravy & Snow Ice Cream" when I get it finished.

Mother's Thousand Island Dressing

Always keep a jar of this in the refrigerator. This is the secret sauce for the pimento & cheese. Daryle


3/4 jar Miracle Whip
ketchup
1/4 cup lemon juice
1/4 cup sugar
1 tsp paprika
1/2 tsp onion powder
1/2 tsp celery seed
1/4 cup Worcestershire sauce
2 tablespoons mustard
1/4 teaspoon red pepper



1 Mix all ingredients except ketchup.
2 Fill jar with ketchup and mix all thoroughly.
3 Store in refrigerator

I've been doing this one since my SIL left town recently and had a huge bag of shallots she needed to get rid of. I really like it.

1 cup peeled shallots
4 cloves peeled garlic
3/4 cup olive oil, divided
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 tablespoon Dijon mustard


Preheat oven to 400^F.
In a medium glass baking dish combine the shallots, garlic and 1/2 cup olive oil.

Stir to coat evenly.

Cover and bake until tender and golden, about 40 minutes, stirring now and then.

Drain shallots and garlic and place in a blender or food processor.

Reserve oil.

Puree shallots and garlic and transfer to a heavy medium skillet.

Add remaining 1/4 cup olive oil, stirring to combine.

Over medium heat, continue stirring until brown, about 3 minutes.

Return to processor and add remaining ingredients, including the reserved oil.

Process until well blended.
Season to taste.

Can be made ahead and refrigerated.

Bring to room temperature before using.

Real simple one in case you run out of Thousand Island. smile

1/2 cup mayo
1 Tbs catsup (may need more/less go by eye)
1 Tbs sweet pickle relish
dash onion salt and white pepper.

Young Redneck Salad Dressing

Dodge lawdogs and make it home from bar/party.

Feed the dog(s)

Notice it is too late to cook anything.

Find empty pickle jar in ice box.Notice spices in jar.

Remove brown mushy parts from head of lettuce, then cut off a chunk of the green part, chop into a clean bowl or plate. (optional)

If you find any other veggies like onion,radish,bell pepper,add.

Find pickle jar again. Add some Mayo or Miracle Whip to jar. Shake real good. Look at above recipes and add some of that stuff if you have it. Pour on lettuce (nd other stuff if you had it.)Eat. Lay in floor with dog(s) and beg forgiveness for being so late. Don't forget to buy more pickles.
