So in other words ruined. smile Ribs and butts need to be done to get them tender, but for loins and chops if it doesn't have pink in it I consider it a failure. Nothing worse than a cut pork chop you can strike a match on.

Yep.

That's where the former higher done temp for pork came from. Now, Instead of pulling at 160, pork can safely be pulled at 145 and allowed to rest. As long as that temp is met, It's safe (ir)regardless of any pink.

Commercial pork operations can no longer feed food scraps without cooking them.

Trichinosis in pork is virtually unheard of anymore.
