do they truly make such? I have a few with changeable mag realise an ambidextrous slide release . But they do they make any with the ejection to the left-handed side?

Never seen or heard of one that ejects to the left.

Apparently there is at least one. Never seen one, don't know anything about them.

Goto Cabotgun.com. They make 100% right brained guns. Might need to mortgage the house, but they good news is they are top end, extreme top end. You can even get genuine meteorite grips if you want. I've never shot one, but fondled more than my fair share and shot competitively with two guys that use them for bullseye competitions.

The Walther P-38 and the Walther P-5 both have left side ejection.

I have one of these and I am left handed but never noticed the left side ejection port before.

The P-5 is based on the Walther P-38. If you look at a P-5 with an
extended round protruding barrel you can see the resemblance.

There was a company called Randall that made true lefty 1911's in the 1980's.

$2500- 3k when they come up on gun broker. They had a mirror set you could buy as well.
