I realize there are many variables. On average, how much would and arrow drop at 40 yds changing from an 85 gr point to a 125? 70 lb bow.

I'd think around 4 inches lower at 40.
If you don't change spine or shaft weight. Changing point weight only.

That’s what I’d expect from my changing from 100 to 125, but your overall arrow weight is an important factor as well.

Changing point weight does change overall arrow weight. Changing spine or shaft would do the same but in addition to the point weight change.
That's why I specified "point weight only."
I factored using a ballistics calc. It matches my past experiences closely.

Increase of 40gr and a predicted drop in speed of 12-20fps.
Looking at a -3-4" difference in drop at 40yds.

40 grains added to the tip is going to alter your tune as well.
I always recommend a heavier tip. Yes you will see a bit more drop ... best way to tell is to sight in at 20 then use that same hold at 40. Donthe same fir each.
Comparing the distance this way gives you a better field guide. The heavier head at 20 will still cause the need to move sight pins.

I’d think that’d pretty close
