Appreciate the help.

I am making the Emeril recipe tonight.

Would still like to have some more recipes as fall and winter are perfect for making red beans and rice.

I made Emerils Sunday it was very good. Would be too spicy for some. We will definitely do it again.

How did it turn out?

Turned out pretty good. I cut back on the spices. I will make it again. Going to try the other recipes suggestions in a week or so.
