Good afternoon my cyber friend, I trust the day out on the eastern part of the US is behaving acceptably and you're all well.

Truly bacon, not Canadian or back bacon but real bacon, is one of the pinnacles of natural products developed by human genius.

When it's summer here and we're in full gas grilling mode, I'll take a chunk of deer meat, a section of backstrap or nice bit of the hind are fine, put on a little salt, pepper and Herbs de Provence and give it a quick sear. Then it's double wrapped with whatever bacon called the loudest as I pushed the shopping cart past it and slow cooked to an internal temp of about 135°.

We'll rest it for about 8 minutes, slice and serve.

Honestly Cash, it may not be proverbial nectar of the gods, but if done correctly, one may crave a cigarette afterward.

Now for the sad part of my thoughts on your post sir, despite having tried a few medium costly Bourbons, I want to say Bulliet, Buffalo Trace and Maker's Mark, I must with some regret admit we just could not come to terms with each other, so our collective relationship was ended forthwith.

But since it's nearly Christmas, let us focus on the positive and both raise a glass of something we each find suitable to the wonderous product which is bacon.
