Highest and best use of feral horses. Not pets and working horses.
Why did I know the ethnicity of the horse butchers before the names were stated? What was the ethnicity? Cuban? Hispanic, anyway. My first thought was illegals from SA. Guatamala, Columbia, or Venzualia maybe, but I don't know. Could be Mexico, too. We are going to see more of this because of food prices, jobs, incomes, and the economics of unchecked illegals. This.

Wish they'd do that to mustangs. In the 60's and 70's, the cowboys would round up sheep in Nevada. When they finished, They would bring in a reefer, shoot as many wild horses as they could, butcher and fill up the reefer. Pretty good bonus at the end of the season. Of course that all got shut down by the bleeding hearts. My father used to haul the wool out of these canyons when he was young. Story comes from him.

Supposedly Zebra is top of the line meat. I would try horse without any issue.
The issue I see is the theft. Not that they ate horses.
Now if the horse was my pet and I caught them, well it wouldn't be good for them. They would prefer to be in jail instead. One of the very best steaks I've ever had was zebra backstrap cooked rare over wood coals in Namibia. I, too, would eat horse meat without any qualms. Edited to add: As long as the horse wasn't stolen from someone!

Considering there is no market for old or worn out horses anymore I would think running an ad offering to take unwanted horses would get quite a few responses. But you would have to butcher them yourself somewhere out of sight.
Several people have tried to give me donkeys. When I used to help the sheriff by taking animal related calls there were lots of calls about horses not being cared for. The usual situation was the horses were useless and the folks didn't have the money to take proper care of them and there was no market for cull horses. Horse meat used to be an ingredient in dog food or was used to feed carnivores in the local zoo. Not any more, Wild Horse Annie put a stop to that.

A great-uncle, who worked as an auctioneer, told me that most of the horses sold at the local livestock auction were shipped to France for meat. Locals wanting to buy a horse couldn't outbid them.

I know that some of the National Parks would be happy to lose all of their feral horses. The family of The Pioneer Woman cooking show host, Ree Drummond, feeds feral horses on some of their pasture land in OK on a Federal contract. More tax payor money going to waste, feeding horses that nobody wants until the day that they die.

It was in Lynchburg, VA When we were kids we'd go watch them butcher horses[it wasn't your typical slaughter house] until they moved the operation to Lynchburg. It was just a side business then[60's-70's] to go with their fur shop and beef operation.
