Stopped by the local BBQ joint and picked up a pound of pork. Had a sandwich for lunch and the wife put the rest of it in burgoo. which we'll have for supper.

I actually have some boiled jasmine rice in the fridge, and a few jalapeños. May have to try that for supper 👍

Spam fried rice, omitting the gay vegetables and substituting enough jalapeños to give you the head sweats. Thanks for the tip, Jcubed! Good stuff.

Canned salmon croquettes with easy over scrapped the bottom potatoes. Pear salad with mayo and cheese. Had breakfast for supper: scrambled eggs, toast and bacon. Fighting with Covid; between it and the meds, not much appetite. Lots of hot tea, coffee and Wylers lemonade. Saturday dinner is center cut pork chops smothered in GF Progresso Cream of Mushroom Soup and long grain rice. Easy peasy. Made GF sausage balls for breakfast and snacks. Sunday dinner will be sirloin steak, potatoes and salad cooked in cast iron Griswold skillet that belonged to my grandmother. I’ve owned it 54years and don’t know when she got it. Y’all have put a Spam craving on me. Love fried Spam sandwiches or baked homemade honey mustard Spam with long grain buttered rice.

You likely don't lack for seafood joints, but in the midwest where Culvers originated, they have some of the best Cod, Walleye, and Shrimp around...

John, I was going to have the cod sandwich until I read the yelp reviews about the pot roast sandwich. I'll get the cod sandwich next time.

Just finished a half of a carne asada burrito, SoCal style. Big, all meat with just some pico de gallo on it. No friggen rice and beans and filler. Ate half the other day and brought the rest home. It was delish.

Done with lunch some time ago- - - -just put a pan of Ramen noodle lasagna in the oven. Wife can't eat most tomato based dishes so no Marinara sauce. Mine is made with shredded chicken, Ricotta cheese, alfredo sauce, heavy cream, Mozarella and parmesan cheese, and frozen spinach. Try it sometime.
