If the fish has a strong taste then baking it with a blanket of stuffing with a can of chopped clams in it works. This was my mothers bluefish recipe.

I bake a lot of fish with Town House cracker crumbs, butter pats, a little wine and lemon juice with a shake of paprika or parsley.
When that gets boring, I'll cover the fish with a tomato base sauce. I slice onions thin and cover the fish with them, then toss in a few good olives and cook down a can of chopped tomatoes and pour that over the top with a splash of wine and some fresh oregano, basil leaves and parsley.

I am looking for some recipes for baked fish Got any ? Thanks There are lots. Many fish bake well, some better than others. I'll bake about anything in a foil wrap with taters & onions. 350 oven, fish, veggies, butter, lemon juice, spiced to taste. It's very easy.

Halibut with Herb-Almond Crust
1/3 cup plain yogurt 1 large egg white 1 Tablespoon dijon mustard 2/3 cup dry unseasoned bread crumbs 1/4 cup finely chopped almonds 1 Tablespoon chopped fresh oregano (or 1 teaspoon dried) 1 Tablespoon chopped fresh mint or dill (or 1 teaspoon dried) 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1 1/4 lbs halibut fillet, cut into 4 pieces 4 lemon wedges
Preheat oven to 400 degrees. Lightly oil a wire rack large enough to hold fillets in a single layer. Put the rack on a baking sheet and set aside.
In a medium bowl, whisk together the yogurt, egg white, and mustard until creamy. In a shallow dish, combine the breadcrumbs, almonds, oregano, mint (or dill), salt and pepper.
Dip each piece of fish in the crumb mixture, then in the yogurt mixture, and once again in the crumb mixture. Set on the prepared rack. The pieces of fish should not touch. Bake for 12 to 15 minutes, until the fish is lightly browned on the outside and opaque in the center. Serve hot with lemon wedges. Serves 4.
