Use one half of the boned breast and one thigh. This is enough for about two people for one hearty meal. Make the sauce by mixing 50-50 Franks Hot Sauce and honey. Cut the meat into long strips 1/4 to 1/2 inch square Bread the meat using seasoned flour Put the breaded meat into the oven at 350 degrees and cook until about half done. Pour on the sauce and cook the last half until done. Turn the meat occasionally so that the sauce covers it well. For a sauce with even more kick, add red pepper flakes, some garlic powder and perhaps some cajun seasoning. The flour will thicken the sauce. Good eating !

Sounds good, but I like my Wild Turkey on the rocks. Will have to try that recipe of yours on some snow geese!
