I'll add, skinning is very easy if done correctly. First, you need to kill them properly with minimal damage. Second, your best off skinning them straight away while warm, it takes about a minute to skin. Use a good small knife, not a monster, and execute the tail bone cutting method where you step on the tail with the ball of your foot. Very easy with the proper knife and a bit of practice.
