I tried something new. Usually I marinate asparagus in soy sauce/sesame oil in a 2:1 ratio. I've tried soy sauce and extra virgin olive oil too. Tonight I stuck asparagus on toothpicks, making rafts and soaked them in soy sauce and chili oil. BAM And BAM Best so far, sprinkle sesame seeds upon and serve hot. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

But I love chili oil for lots of stuff!!!!!!!!! WIll have to try to figure out what you mean by rafts? Miss T usually steams asparagus very briefly and sprinkles lemon pepper on top of the butter she slathers it with. art

Apargrass sticks pan fried in butter and fresh chopped garlic. Salt and pepper to taste on your plate. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

I coat mine in Extra Virgin Olive Oil, Kosher Salt and Fresh Ground Pepper then grill. Grilling seems to bring out a sweetness that you can only get by carmelizing the outer layers. My wife loves it!
I also saute in EVOO, and garlic as well, but my wife definately prefers the grilled.

Go to the super market and find some thai dried bird peppers. A coupe of them simmered in a cup of light oil like canola makes an impressive chili oil. Don't go overboard and put too many or it's fire below, they'll burn you twice.

I like Emeril! Yeah hes a Ham, and not a really fine chef...but entertaining in presenting the "obvious" which IME is not obvious to all cooks! My ex wife is tops on that list!
Rafts...think of asparagus spears as the logs of a raft, and the toothpicks as the binding....they are easier to handle on the grill this way.
I also love Hollindaise sauce on asperagus! I can provide recipe later when I can go find it. Its labor intensive.
