No marinade, but I applied Texas BBQ rub, both under the skin and the outside, let it sit overnight, cooked slow.

That right there is my favorite cut of chicken! Nicely done sse, looks really good. What internal temp do you cook them to? 180 in the thigh?

I don't bother checking the temp, but just wiggle the leg bone to test for doneness. It is possible to overcook chicken dark meat...It won't be burnt or even taste bad, but the meat will loose its good texture.

Edit to add, if you wiggle the bone and it comes loose, it's overcooked...no biggy, though, still tastes good, unless way over-cooked.

Great heat control. Chicken is browned just right for my tastes. I`m with the gent that likes the skin best, although I like the rest almost as well.

Im gonna catch more hell for this than my chili recipe, but I LOVE me some chicken on the grill with Sweet Baby Rays BBQ sauce slathered all over it! laugh

First, you need yer mouth washed out with soap...

Next, that last pic is not part of the crispy skin batch in the beginning pics, so, you caught that one. You win a tub of margarine.

I included it because it looks so good. It is from a batch I did last summer and sauced at the end of the cook, which I do from time to time, but not usually with a store bought sauce, though I have nothing against SBR's or Cattleman's.
