Its our 23rd anniversary, so out comes the last back-strap from a cow elk two years ago. Also, she will be working out-of-state for the next 2 weeks. So, I better fix something she�ll remember me by.
Let�s see; � inch thin slices marinated thusly:
1/4 cup soy sauce (as salt)
1/2 cup veggie oil
1 tablespoon cracked black pepper
1/2 teaspoon each of garlic powder,
dry rosemary (crushed) and
dry thyme (crushed). Mix and marinade
the meat 4-12 hours.
Then fried fast to rare/med-rare.
Accompany the above with roasted new potatoes and roasted (in the same pan) broccoli florets;
Oven to 375
Heat your favorite oven proof fry pan to hot, add your favorite veg oil to coat the bottom.
Place 4-6 golf ball size new potatoes in the pan and shake. Salt and pepper the oiled potatoes. Put the pan in the oven, after 15 minutes, take it out, add the florets, shake and return it to the oven. Let roast for another 15 minutes (time depends on how large the potatoes are). Serve.
I�ll set the table with some warm potato rolls, butter and some 2003 homemade chardonnay (from an uncle). The heck with a salad.
