What's the difference between U.S. suet and British suet? I've got organic beef ranchers in my congregations, so I just ask them to set the kidney fat aside at the butcher and I go pick it up. It has a myriad of uses from rendering out to make pastie crusts to feeding birds out back. Gotta keep the pileated woodpeckers happy!
