If you get it on ice as quickly as possible (most antelope hunts are borderline hot weather hunts for us), it's by far my favorite big game. A friend and hunter owns one of the better gourmet Italian restaurants in Boston. What he does with game meat is fabulous. Rick the venison looks great. The 280 Remington is overbore. The 7 Rem Mag is over bore.

My wife and I each have two tags this year, and are looking forward to filling a considerable part of the freezer with e'm. Luckily, the Montana rifle season starts the second week of October, one of the latest in the country, so it's far easier to cool the meat. Last fall, in fact, my wife got hers on a 24-degree morning!
