Well here I go ! it 27 outside and snowing hard, so who wants to bbq outdoors ...ME....pork butt 101, when u shop for the butt look for a large/best part butt in the pkg this is a pic of what to look for "its opposite the bone end " ![[Linked Image]](http://i1119.photobucket.com/albums/k632/atvalaska/IMG_0213.jpg) in inject with a mix of butchers,beer,water,butter,soy s,mustard - rite in the cryo vac ! I have a stoker as well!!! One of the first that Rock built. I was one of his guinea hogs!!  Do you use the IP interface? I think the new ones have Wi-Fi.

That's all I had.  Although, I do inject my butts the same way, which is inside the cryovac. I like that strategy.

445 is what the boiler was inside when the a-stat cut the blower temp ....temp drops as it goes .....198 was the temp of/water /boiler when the meat hit 170+ ....= a reverse slow cook bbq !

dam!!!!...it should be against the law for u lower 48'ers to burn, any of the flavorful bbq woods to keep warm ......go to jail do not pass go......!
