In honor of fieldgrade I used my 24 year old Smoky Joe with oak charcoal ( should have used the BGE as this thang don't get hot enough to char quickly grin )...

Damn Keith, that looks good. Best meatloaf I ever made was with speed goat and pork cracklins'. Have never tried Stubb's green chile sauce, but will keep an eye out for it. The others are pretty good stuff.

Yum!! I've never seen the Stubb's Green Chili, but it sure sound good.

How can a SJ not get hot enough?

I burn chit in mine all the time.



BTW,,,, you should have told me you were making Fajita's.
I could have mailed you some of those refried beans for a side dish.
Would have saved me the stress of worrying about freezing em.

That does look good! We don't have speed goats around here but if it's like the deer flanks most of it get ground into hamburger.
I think next year I may fire up the wok and just keep feeding it with lean trimmings while I'm cutting the deer up. woooweeeeee...

Pronghorn flanks are so thin most come off with the hide and get tossed. Not with me they don't grin

Sorry, I've been MIA for a while. Yes I was making a joke as to the sour cream. My wife likes "calf slobber" on her fajitas and I tell her the same thing. I'll do fresh jalapeno, onion, cilantro and avocado grin grin grin

Believe me when I tell you that home grown roasted green chili is as hot as any japaleno eek The ones I grow you never know how they will be from year to year. I like cilantro but my wife does not.
