The wife picked up some large chicken breasts so I thought I'd give them a whirl on the charcoal grill/smoker. First I made a rub of a few different spices from the cupboard. ![[Linked Image]](http://i1152.photobucket.com/albums/p497/Rooster5369/IMG_1950_zpswzepunwb.jpg) I then soaked some cherry wood chunks in water. Then built my fire on the opposite side of the grill from the chimney stack. I placed an alum water pan above the fire and one below the chicken. Next I put the cherry chunks on the coals and shut the hood for just shy of 2 hours. Then I glazed the breasts with a Raspberry Chipotle sauce and shut the hood for about another 10 minutes. ![[Linked Image]](http://i1152.photobucket.com/albums/p497/Rooster5369/IMG_1955_zpswxkffbiv.jpg) It turned out incredible! These things were dripping juice when cut into and the raspberry complimented the smoke perfectly. A couple days later we had all the kids home with some friends so I made it again. Don't remember the brand, but we have bought a raspberry chipotle sauce from Sam's, when in the States. comes in a fairly "squat" bottle, with a long neck & a green label, IIRC.
Awesome with a cheese plate too !
