Can't really tell what blows your skirt up by the list you posted but it seems more tuned toward deer with a possibility of some varmints if the opportunity arises, along with a bit of range/target shooting? Does that sound about right?
With your choices and the improvements in bullets I would consider a 6.5 -06. Great bullets available in light and "heavier" weights. Great BC's for long range target or game shooting. Easily fits into this action- which I would restock and put BDL style bottom metal on. Easy to reload and very efficient. Can be made as light as you want without sacrificing much. Put Quick release Leupold bases on it, and sight in a different scope for different scenarios. A 6 x 20 for varmints- coyotes, wood chucks, etc... and a 2.5 x 10 +/- for deer, pigs, etc.... and be ready to change in an instant to suit the situation. For real flexibility, each scope could be sighted for different bullets- the long scope for light, explosive varmint bullets and the other for heavier game bullets. Change scopes, change loads, and your 300 yard deer rifle (or whatever you feel like) becomes a long range coyote killer...
I know a rifle like this begs for a stiff McMillan stock or the like, but I really like a nice piece of wood on a rifle I'm going to carry in good weather.

Agreed, was going to find a walnut stock with some figure.
Considered the 6mm but had decided on 6.5mm. 8 twist 6.5-06 I think wins.

Yes I know what the 6.5x284 is. It's the barrel burner with impossible to find or afford brass Really? Please elaborate on both counts

Midway either doesn't have the brass or its more than a buck apiece. 284 same. It is said to be a barrel burner by those who know more than myself and have used it.
Not criticizing, was kinda saying it in jest but it's a little harder to find.

It is a necked down .284 Winchester....no belt...simple
Brass can be necked down from .284 or bought new...Norma manufacturers it with correct stamp if this is your thing
Norma also makes ammo for the 6.5x284N
The 6.5x284N has a TOP fps of 3k with a 140 grain bullet but can gain a bit more...
Hardly a barrel burner.....piss, a 30-06 pushes a 150 3k+
The 6.5x284N has a 35° shoulder and that kicks the 6.5-06 17.5° shoulders ass in every way
Add in a bullet with over .7BC and the 6.5x284N is the king of the non magnum standard action in the 6.5 class
The 6.5x68S is the standard action king if having your bolt face opened up slightly is your thing.....still no rim
