Ok, what wild game have you eaten in your life? My list is probably fairly common and mundane:

Dove
Squirrel
Rabbit
Duck (mallard and wood duck)
Woodcock
Pheasant
Turkey
Coon (at Granny's)
Possum (at Grandma's)
White tailed deer
Black bear (not one I killed)
Elk

Fish it's perch, bass, crappie, catfish, walleye, trout, buffalo,

For the most part, I really like wild game, usually it's very easy to make it as mild as any domestic meat you can eat.
Elk, deer, boar, rabbit, squirrel.

Cannot prove it but I suspect I have eaten Kangaroo because way back when I was in school we would get some kind of frozen patties and it said Australia right on the box and at the time we didn’t have any Pattie’s around that tasted like that. When we got to asking about how different they tasted the school said because they had soybeans in them!!!

Have eaten all the above and some I did not know. Great Grand Paw was a German and being in eastern Tenn. on Lake Norris. When we sat down to eat, I ask what kind of meat it was. Answer meat is meat eat it or go feed the stock. Never asked again but it was always good. Mama was a great cook.

I grew up on Mule Deer & Antelope never ate beef until I was in high school on a foot- ball trip!
I shot my first Whitetail when i was 25 or so. We didn't have any before then (tasted the same as Mule Deer)

Buddy used to host a game feast every winter. Guys always brought all the regular stuff, plus nearly anything else. Muskrat is actually good, groundhog is good as long as it's a young one. Eaten turtle dang near any way you can cook it. Bobcat was ok, but not my top pick. Not game, but Equine Burger is pretty good too....
I ate a lot of moose meat when I was up in Canada. Very good.
The best meat I have ever eaten is the ham from a female wild hog, cooked in a smoker for 10 hours on pecan wood.

Good afternoon, I hope the day's been kind to you and you're well.

The meat was indeed a bobcat and not a lynx, though we do have both around here.

It and the beaver as well as the caribou were at an annual game banquet which our fish, game and gun club used to put on. We'd get donations from members who were trappers and hunters and then have a catering company come in to cook the meal, along with all the side dishes and usually turkey and ham as well for the non-hunting folks who'd come as it was sort of one of the things to be seen at in the little town back in the day.

While it was a long time ago, I recall that the beaver was better than we thought it was going to be, but a wee bit muddy flavored for sure. We found out later from family who used to live up north that beaver should be boiled first to get as much fat out as possible and that'll get more of the muddy taste out.

The bobcat was really marginal as I recall. Tough and not a pleasant flavor, but edible if one was hungry I suppose?

Both the bobcat and beaver were done up as roasted chunks of meat then sliced if I'm recollecting right? I can't imagine trying to cook meat for 400 people and then having all sorts of carcasses show up, mostly frozen and mostly well taken care of before they were donated.... mostly... wink

Perhaps if one had a sample of either meat and took meticulous care of the carcass and then cooked it carefully paying attention to not drying it out or overcooking it there'd have been a better result?

That said, I do know that in our experience black bear can be all over the place regarding flavor. Some of them are downright rank, some taste "not right" and one vineyard raider was some of the best wild game meat we've ever eaten. It rivaled a fat Sitka Black Tail buck I killed in early August or maybe late July that was absolutely wonderful table fare.

The caribou was fine I thought and couldn't have told you it wasn't deer or elk. Going from a foggy old guy's memory I recall the texture as more similar to them and less course than moose.

Since making the list I recall eating bison a few times too, but I don't think any of the roasts we had were from the wild ones up north here in BC, so they weren't wild then and shouldn't be included.

Some long lists, but I don't recall seeing porcupine. Porkies are tasty and can be done many ways, as in sectioned like rabbit and braised along with the usual accompaniments. This is a tender and very tasty wild game meal.

Ha ha! Same here on the "Australian beef" on the school menu. I'd never had kangaroo, but I knew damned well it wasn't "Australian grass-fed beef". A co-worker told the principal she took a sample and was going to have it tested. The item went away immediately- and we got word the school district took a bath on that "Australian beef" deal. I've no doubt they got it at a good price - until then.

I know wild game when I taste it, mostly. And mostly I like it. It sure as hell wasn't beef. Can't prove it was kangaroo, tho.

rabbit and hare, hun partridge, porcupine, pheasant, sage, sharptail, & spruce grouses, ptarmigans, dove, various ducks, geese, mule and white-tail deer, bison, pronghorn, black, grizzly, and polar bear, beluga & bowhead whale, seal and walrus ( take a pass on those!!!), beaver, caribou, moose, goat, sheep, elk, 4-legged cougar ( I understand the 2-legged can be a bit gamey, but at least one doesn't have to shoot it first), musk ox (you could maybe fool me on that for beef, at least if I hadn't had it identified first time I ate it - probably not, now).

The regulars most have noted. Some of the weirder ones are Mt. Lion - very good by the way, mild w/ light colored meat., Bison, Boar, Bear and a few others. Lots of birds and fish. I prefer antelope steak to about anything.

Cannot prove it but I suspect I have eaten Kangaroo because way back when I was in school we would get some kind of frozen patties and it said Australia right on the box and at the time we didn’t have any Pattie’s around that tasted like that. When we got to asking about how different they tasted the school said because they had soybeans in them!!!

Ha ha! Same here on the "Australian beef" on the school menu. I'd never had kangaroo, but I knew damned well it wasn't "Australian grass-fed beef". A co-worker told the principal she took a sample and was going to have it tested. The item went away immediately- and we got word the school district took a bath on that "Australian beef" deal. I've no doubt they got it at a good price - until then.

I know wild game when I taste it, mostly. And mostly I like it. It sure as hell wasn't beef. Can't prove it was kangaroo, tho.

rabbit and hare, hun partridge, porcupine, pheasant, sage, sharptail, & spruce grouses, ptarmigans, dove, various ducks, geese, mule and white-tail deer, bison, pronghorn, black, grizzly, and polar bear, beluga & bowhead whale, seal and walrus ( take a pass on those!!!), beaver, caribou, moose, goat, sheep, elk, 4-legged cougar ( I understand the 2-legged can be a bit gamey, but at least one doesn't have to shoot it first), musk ox (you could maybe fool me on that for beef, at least if I hadn't had it identified first time I ate it - probably not, now).

There was a bit of a scandal back in 1981, where exporters were putting roo meat into beef exported to the US, so you may be right. It could have been horse too, because that went in as well as roo. A few people went to jail over it.

Roo is good tucker though. Zero fat. It does taste different to beef (so does horse).

The biggest thing I've noticed is that just about any sort of big game, wild birds or gamefish can taste good if prepared well. But then my wife is professional wild game/fish cook and does plenty of research on how to do it.

axis
pronghorn (well cared for)

Honorable mention.
Porcupine was surprisingly good.
As was feral hogs that had been been feeding on wild onions.
