Oh. I dunno? Depends on the heat. Regardless we’re eating around 2:00 pm. Being weak of tooth I like my stuff tender so I can chew it with my ancient choppers and try not to loose any more. About 8:30 or 9:00 I’ll wrap the brisket and ribs in foil. The hams are already wrapped with the intention they become pulled pork.
Got them packed with sweet onion and orange slices! ( hey don’t knock it till you try it). And splashed a bit of cheap Italian salad dressing too. I dust everything with coarse black pepper and Tony Chachere’s original. All seem to like it.
I'm on my second cuppa, and swear I can smell it from here, KW!
Mornin'

You'd enjoy it, Richard.
Bob is an educated man of many talents.
Sounds great. Now to make another pot of go-go juice and fry up some bacon. Crew will be here soon.

Actually looked to be sure you weren't using metric as a joke.
I though Vegas winters weren't very cold.

Bob don't think I can get there from Michigan by 2:00, wish I could sounds like a Feast!
Sounds like you're set for a good time. Lotsa work tending the fire. That pit looks well insulated so perhaps not as time consuming as my metal pit. Enjoy.
Some of the bests meals I remember eating down in Texas were cooked in a pit.

Northern New Mexico often drops below 0 in the winter. Here in Las Vegas, though, we've hit 100 exactly once, officially.
Here at the house, we are at 6550 feet above sea level, right on the edge of the Rockies.
A little north of us, at Eagle Nest, they sometimes are the coldest spot in the US. They sit just east of Wheeler Peak - 13,161 ft. the highest spot in NM.
Looked like a pride of lions on a wildebeest in the kitchen earlier. So I guess they enjoyed it. One rack of ribs and one ham left.

If I could talk my wife into it, we'd move to TX,
