I got two wild pig hams, a beef brisket, 3 racks of St. Louis pork ribs and 4 lbs of pork sausage.

Regardless we’re eating around 2:00 pm. Being weak of tooth I like my stuff tender so I can chew it with my ancient choppers and try not to loose any more. About 8:30 or 9:00 I’ll wrap the brisket and ribs in foil. The hams are already wrapped with the intention they become pulled pork. Got them packed with sweet onion and orange slices! ( hey don’t knock it till you try it). And splashed a bit of cheap Italian salad dressing too. I dust everything with coarse black pepper and Tony Chachere’s original. All seem to like it.
