I like them as long as they are not packed with things like celery and onions. If I'm paying for fish, I'm eating fish.

Not so much on salmon, but I make fish burgers all the time... Rock, Cobia, Sheephead, Sierra, shark, Jurel etc. etc.

Pork rinds as an added binder/crunch with mayo and Texas Pete... or some variation.

Oil in cast iron... or bacon grease.

Homemade dills on white bread.

Grew up on the Oregon coast. Salmon was plentiful. Mom use to make salmon patties quite often. Now I prefer white fish.

That’s like asking if anyone likes crab cakes!

Well, the good ones are pretty fine. I’ll pass on the canned pink version, thank you.

But I rather prefer salmon croquettes, to be honest.

Have eaten them off/on most of my life. I can take them or leave them. My late mother & second wife fix them about the same, & think the only sides I've ever had with them were fried potatoes & pork n beans. Maybe mac & cheese sometimes.


A meal that seems to go back many decades.

We make them sometimes with the previous nights leftover salmon. If it's fresh, grilled with blackened seasoning is the best I think. Some fresh dill, basil, garlic, dijon, s&p, a bit of lemon, mixed with mayo spread on the bun also.

Mom would make them out of canned salmon or homemade canned sucker. Egg and crackers to bind and fried in lard. I really enjoyed them, but we was poor folk and I had two older brothers so it didn’t pay to be a picky eater.

Love salmon patties. Had them for dinner a couple nights ago. I scrape the carcass with a spoon after I filet a salmon or steelhead. You end up with enough for a couple patties.

I add minced onion, celery and bell pepper. Mayo and some bread crumbs. I like them thin. IMO they eat and cook better thinner rather than thicker

Love any "fish cake". Dad used to make patties from red fin suckers we caught when they run in the spring.Not sure exactly how he cleaned them, but I know he used to dunk the chunks of cleaned meat in a pan of hot water and flake the meat off the bones.

Ate them for years growing up. Wife might cook them once every 3 months. We far prefer salmon fillets these days.

Salmon ruined by overcooking is extremely common. My own mother was a horrible fish cook... Baked fillets for about 20 minutes and then covered half of the fish with sour cream or mayo and put it back in to brown. It sucked. Cooked properly it is very good fish.

Like fish chowder, making salmon patties (or any kind of fish cakes for that matter) is a way to use up small pieces and pre-cooked leftovers (also canned) that cannot be served as fresh filets or steaks. At least that's how it worked growing up in the '40's and '50's.

I like them.

Mom made them, I ate them with an equal weight of ketchup tp cover the taste.
I remember sitting at the table after everyone else was done, staring down a
salmon cake. Hoping it would disappear. Dad taught me to bury them in ketchup.


Many years later I made some comment to Mom about salmon cakes, and
she busted out laughing. "We had them for supper awhile back. Your Dad looked
at me and said, "I know you like these, but you dont have to make them very often for me." She started laughing again and continued, "You don't like them? Holy Hell
I hate 'em, I made the damn things all these years thinking you liked them. Wait till
Karl hears this, we forced him to eat them when he was little."

i like them,we do trout cakes and catfish cakes. i have 20lbs of fresh caught lake ontario salmon in the freezer now. none of it will be made into cakes. grilled is my favorite.

My Grandmother used to make them for me for lunch if I was at her house. She made it out of canned salmon. I remember her picking the bones out of it before putting them together. I think she used Saltine crackers mustard and mayo. She fried them.
Doubt I would enjoynit these days out of a can but I might try some out of fresh salmon.

Chop half roughly & balance very finely, the fine paste becomes the binder !

Like P-Tar, love a fresh salmon burger/sandwich too.

Can you substitute the crumbled pork rinds for flour as a binder, or do you still need some flour?

Mama made mackerel , sometimes salmon patties. It was all good with catsup. Didn't pay to be picky about food during those times.. She used cracker crumbs but I bet you could use oatmeal....I use it in meatloaf.

Canned salmon prices kinda made these a dodo-bird.

And if I had fresh salmon every week, I can think of a lot better way to prepare salmon.

But I do love salmon patties. Tuna also.

You have a point. Canned salmon is just a cheap bad tasting source of protein. If the 1970s Gulf coast commercial fishery quality standards are the same I bet a lot of near spoiled fish ended up in those cans. Maybe spoiled.
