Thanks to EdM,
I went down the migas rabbit hole. Been researching #1, what the he’ll they were, and #2, how to make them.
First try this Morning breakfast. Tortilla chips from local joint leftovers, scrambled eggs, Paul Newman salsa, a little chorizo, little fine diced potatoes, some fine diced jalapeño and onion, and cotija cheese on top. Added some guacamole on top.

Pretty good. Anyone got a version they’d share? For that matter, any Mexican breakfast. Huevos rancheros?

Huevos rancheros is too much a pita for me to make here.


It's something I really miss about trucking, a darn good breakfast done right.
Tried it at a local "authentic" Mexican restaurant.
I won't question their Authenticity.
But I will say it wasn't as good as Southwestern US places make it.

My favorite is machaca and eggs.

But, chilaquiles, migas, rancheros, chorizo and eggs, etc will do
