Our “Poor Man's Lobster” was always Pike cubed and boiled in water with Old Bay seasoning than dipped in seasoned butter.
Here in Utah, they use striper or wiper hybrids. Fillets cubed and boiled in 7-Up, then drizzled in butter.
In truth, any white flesh fish ought to work. But it isn't anything like real lobster, to be honest.

Ya, those ling are pretty good. The texture, and flavor are very similar to lobster when boiled fresh. I found em to have a stronger flavor once frozen. Pretty good fried as fillet with lemon pepper too. We catch em at night, and they don't fight a whole lot but sure eat good!

Lobster is lobster. Never ate any fish that came even close to the taste,. And that includes ling and golden eye which are both excellent.

All these are fine, but really ought to be called "poor excuse for lobster."
Having said that, I'm not a lobster fanatic. I've eaten it, and had my share of it in Maine, where it ought to be the best there is. I just find it to be a little bit insipid. It's a nice dense white meat that's slightly sweet, but what makes it good is the butter. And a flip-flop would be good with enough butter. Not worth the often extravagant price for it, IMO.

Captain was Dave Rider. A salty old bastard, he has quite a gig. He sold what we paid to catch.
Anyway, we hooked a Monkfish and he was wound tight.

I've tried Lobster...I've tried to like it.... I don't care for it. But that haddock.....That's good eats. Especially when it's smothered in stewed tomatoes.

for us it was either cod loins or the back fillet off a northern pike. boiled in heavily salted water. Still make it from time to time.

When living in San Diego, I would go out on the morning kelp boat and fish for sheep(s)head (sp?) (pacific). They eat crustaceans and octopus around the bottom of the kelp beds. Would microwave a couple of fillets, dipped in butter, tasted just like lobster. The microwaving would give them the slight rubbery texture of lobster.
I would also trade a diving friend of mine smoked Yellowtail for Abalone, now that is good.

Yep, I do like lobster but have never thought it merited the high price. Will very occasionally have it as a special treat when it is on sale at the supermarket.

Kent Rollins has a poor mans lobster recipe that we like.
Just be careful buying cod for this recipe.
Often times the cod is more expensive than the lobster.

I’d never heard of a burbot when I moved up. Went ice fishing with a guy and caught some nice ones, he started in about what a pain they are to clean. I said I’d figure on just skinning them like a catfish, which I’d done about 12000 times. He looked at me astonished that I might know how to skin a fish. I peeled and filleted them in no time, didn’t find it any more difficult than your run of the mill blue cat.
Maine lobster are the best tasting when they are to small to keep. a 1/2 lb right out of the trap in a microwave for 90 sec. needs to be cooked hole & alive
