For pan sausage we use the Andoullie mix from sausage seed maker along with some dried jalapenos and fennel. Hard fo beat.

https://www.sausagemaker.com does indeed have a fairly comprehensive inventory but if you do a little research to scope out the market, there are much better choices if you're making small batches as I regard SM's shipping prices to be quite high.

To the OP, that Opas jalapeño and cheddar is about as good as it gets in my opinion. Every time I get to Texas I stop at an HEB to re-up my supply. Bought a pack the other night in fact to get me through this week, prior to buying several packs when I head back north in Sunday.

When I killed hogs and made sausage, our recipe was simple.......sage, salt, black pepper, and red pepper. We bought our spices at the local grocery store.
I buy spices at Sams or on Amazon in BULK... we make and eat a LOT of sausage... sage, red pepper flakes, fennel, kosher salt, dried parsley, rosemary, coriander and "Accent Salt" I will advise you that when butchering wild hogs, you need to leave as MUCH of the back fat on as you possibly can. They have relatively none of the fat content in domestic hogs and can get a little dry when cooking.
