prior thread. This and others are from
Rhubarb Central.
Year ago made this for the guys up at the fishin cabin. Last week made them strawberry cake instead, they were not happy, ingrates...
Rhubarb Crumble
Filling
single pastry crust
1 1/2 cups br sugar, packed
1/3 cup water
6 1/2 Tbsp corn starch
4 1/2 cups chopped rhubarb
Topping
1 cup oats
1/2 cup br sugar, packed
1/4 cup cold
water butter
2 Tbsp AP flour
Combine filling ingredients, let stand 15 minutes, pour into pastry-lined dish
Combine topping ingredients, cut in the butter, mix until it resembles coarse crumbs.
Sprinkle topping over pie filling
Bake at 375 deg 50-60 minutes until brown and bubbly. Use a pie crust shield after 30 minutes
Can also make small tarts, that will bake in about 15 minutes
Think I could switch out fillings, and go with a lattice top instead of a full pastry. It is worth it, this filling is good.
