Just made a big batch of chili with about 4 pounds of beef heart. Heart has a pretty intense flavor, it really kicked the chili up a notch.

Gonna go good with some cornbread and a batch of beans later this week!

I have never used heart for chili. Interesting idea

Dice the heart fairly small and pay attention to the grain. Came out nice and tender. Almost like tongue in consistency.

I heard she could pick up $10 stack of quarters and give ya back 50 cents change.

Nope. Small dice.

Might be a viable option for menudo, since not everyone loves tripe.
