Just made a big batch of chili with about 4 pounds of beef heart. Heart has a pretty intense flavor, it really kicked the chili up a notch.
Gonna go good with some cornbread and a batch of beans later this week!

Chili Corazon, wasn't she like the head of government over in the Philippines (speaking of oddly spelled words)?

Dice the heart fairly small and pay attention to the grain. Came out nice and tender. Almost like tongue in consistency.
