Ok, I’m going to Whack a couple whitetails for sausage...

Can I chunk it up so it’s grind-able and freeze it, THEN come back grind, mix, and stuff it...

OR

Do I have to do it all fresh ?
Every bit of deer meat I turn into tube form starts off frozen first.
Yep. Chunk up collect all you want and grind on a rainy day.

No problem at all. I have a book and video of an old sausage maker he said you could thaw/refreeze several times if need be. The only thing he said to do is dump the blood in the bag into the grindings. Most of the sausage I make is from frozen.
Yep, sure can, in fact, partially frozen chunks grind so much better than warm meat.
I have done it both way and can't tell the difference in the end product.
