Anyone make they're own? Recipe.

Love the stuff.

My brother does...uses the daikons from the ranch (usually forage for the cattle) and though he's usually hell on following recipes, he makes some kick ass radish kimchee (likely from having lived in Korea for a few years when deployed). I'll get the recipe from him.

Thanks brother

Haven't made any in quite a while, maybe this summer though

Jud
There's a gal on YouTube named Maangchi who looks like she knows what she's doing.

Too many ingredients I don't have. On the other hand I'm killing it on sauerkraut and making some delicious fermented onions.

Sorry for the delay, Judman, here's the recipe my brother uses for his daikon kimchi. It's worth the hassle...

I says thats not right cause he is using tillage radishes.

No idea.
Posted By: Remsen Re: Kim chi - 04/08/20
I thought tillage and daikon radishes are same same
Posted By: Jim_Conrad Re: Kim chi - 04/08/20
They are....I just didn't know you could make kim chi out of them.

Thought it had to be cabbage....napa or otherwise.

My understanding is that traditional kimchi is indeed cabbage, but like pickles made from things other than cucumbers, kimchi can be made with radishes and other vegetables as well. Then again, I am pretty far from being Korean.

Thats cool.

I think it might be better with the radish.

They make it out of turnips too. Great stuff!

I've been thinking of making it, but the store-bought stuff is so good & cheap I probably won't.
Posted By: Wannabebwana Re: Kim chi - 04/10/20
Never mind

Hey Jud,
How'd it turn out? Whole family sleeping with the windows open yet?
Posted By: Judman Re: Kim chi - 04/10/20
Haven’t made any yet dan, watched your video, I’ll try that and Remsen bro’s here pretty quick.

When I lived/worked in Korea I ate it daily in Samsung's cafeteria. My favorite was made with radishes. Last summer my neighbor in Idaho made it and knowing of my time in Korea delivered a big jar that lasted most of the summer. I don't make it as I would be the only one eating it.

Bought some at Costco a while back and something just isn't right . . .

Too much of something I'm thinking, but I can not figure out what.
Too salty for sure.

I like me some good kin chi

I have had some that was "fishier" than I liked.
Posted By: Jim_Conrad Re: Kim chi - 04/11/20
Did it have fish parts in it?
Posted By: LouisB Re: Kim chi - 04/12/20
No fish parts in there as look at it Jim.

Fish paste.

Ya’ll need to let this thread die.

I had Kim chi a couple times and it was Ok, then ... THEN someone gave me some with rotten fish (I mean pickeled) it without telling me...

Suprise - Almost up-chucked trying to spit it out ... GAWD awful.

I made this colard green kimchi a few months ago and it's pretty good....

I couldn't find the shrimp/paste so I used some sardines instead.
The longer the jars sit the better it gets!

lived in korea for a year. i could eat the fresh stuff but once it started working i could not stomach it. my one yobo used to pack it in a big glass jar and just leave it in the corner. every meal was a pile of commissary rice and kimchi. cheap and healthy but stanky as hell.
