Best pot I've ever made folks. So delish in my quest for a great sauce that would stand up to something from NJ, Brooklyn, or Philly.Finally a sauce that sticks to my pasta as it should .

Sorry about the messy pot but hey it's a darn work in progress. grin

The next day it was simply fabulous and hope to duplicate it in a much larger batch for the freezer.

Sunday gravy / Sunday sauce it's really in the name but for NJ, Philly traditionally it would be a medium body tom sauce with large chunks of sausage and braciole. It's the centerpiece / main dish.

Mine too. She lived in Sicily for some time but to be honest i can do without the bones. Seems like she puts a whole roast in it and lets it go for hours. Other than that its great.

I actually use pork ribs or porks chops bone-in, somehow the sweetness of the marrow in the bone just kisses it with an earthiness.

But truly it looks amazing, even prompted me to make a batch today, it will make the girls smile and smiles make the day a little bit easier.

It's an ethnic,personal or regional thing. when it comes to meat selection. All good.

Pork ribs or bone in chops, marrow swimming in Sunday gravy ?

In my house when they know it is Dan's recipe, I don't ask questions about serving it, I just throw the bread on the table and back away. His is the BOMB !!!!

Sure looks goooood !!!

According to my Italian NJ friends if that big pot were to be ladled into a serving bowl and the ingredients used as the main dish then it would be Sunday Gravy but if it were simply enjoyed over pasta then it would be sauce. Go figger .

That was my understanding as a kid. Then a new boy moved in near by, and while walking and talking going to school, he was talking about having spaghetti and gravy the night before. Thought it weird until I figured he meant sauce.

His grandma was Italian from Italy. Spoke no English. So true in some Italian circles.

Even though I know both dvd and Ed have eyetalian cred.

If someone called me up and said bring some stuff over and we'll put gravy on it ..... I would gather some beef , chicken,stuffing, taters , maybe some scrambled eggs hashbrowns etc.....and I showed up to a red....azz... spaghetti sauce..w-t-f.......id be pizzed...

Agreed. My favorite is pork neck bones.

Braciole sounds great. Some rigatoni. Broccoli Rabe. A fruity Zinfandel. BAM

My hunting buddy grew up in A small town south of Memphis. He was raised by his grandmother a first generation immigrant from Italy. He said they called it red gravy growing up. If its got meat in it like ribs then I call it ragu.
