It's the time if year here in Northern lower Michigan when the salmon are in the harbors and piling up at the river mouths. My buddies and I have been pulling a few in the last couple of weeks, including 4 between me and my bud, Jared, on Wednesday morning before work.

They're not much good for the frying pan or grill this time of year, but are pretty good smoked. I brined up a batch yesterday and put them on the smoker a little while ago. Last Wednesday's haul...

Apple. Not sure what particular kind. There's a handful of old apple trees scattered around my property from the days when the area was farmed. I just clip a few limbs when I'm going to smoke something.

It came out pretty tasty. I'll probably back off a bit on the amount of brown sugar I used because it's almost like smoked candy, but it's darned tasty.
