I start by marinating chicken (cut up thigh pieces) overnite in yogurt (greek) in curry spices heated in a pan and then fresh grind in coffee grinder. As mentioned above

I use a dutch oven- enamel or cast iron
I saute some finely cut onions, 1/2 cup, in clarified butter about 20 minutes. Remove from pan. Brown chicken for 10 minutes. I add a carton of low sodium chicken broth, add cooked onions. Some fresh curry powder, a bit of turmeric and a bit of fresh ground ginger. You can add some crushed tomatoes and/or potatoes and or fresh peas, coconut milk, and or garbanzos, golden raisons etc, Bake about 45 min in preheated oven around 325. Last 24 minutes uncovered

Serve with jasmine rice and some fresh cilantro on top.
