It is pretty interesting how similar some of the choices are;

My main deer rifle for Buck this year: SS Model 70 All Terrain [FW], in .30-06, 2.5-8x36 Leupy, it has iron sights and for a backup scope an old K-4 in rings.
Load is a 180 Nosler Partition or Core-Lokt or Hornadu PSP,
57 H4350, Remington cases, CCI primers.

For Doe I will likely use an Ithaca Deerslayer, likely the 12 gauge with a Scout scope and smooth bore barrel. Load is Winchester Foster Slugs.
I might use the rifled barrel and sabots if I get a chance to get the scope on it.
