I was a bit disappointed in the edge holding ability of my Dozier Yukon Pro. Used it to cape out a whitetail head(too big I know)and had to touch it up a couple times. Figured it had hit bone a few too many times. Last year I helped my SIL skin and quarter an older angus bull that had hurt his back. Huge bull, went over 2k lbs on the hoof, made a lot of hamburger though. The knife didn't perform much better that time. Haven't used my Ingrams (S30V) for either task but from using them on normal game skinning and cutting I doubt they wouldn't perform better.
