Cabelas used to be a good place to find good deals on used guns but [bleep] anymore they are way out of line on a lot of things. The one here in Denver has a bunch overpriced used guns that's for sure.
Cabelas does fully price its used rifles. The fanciest Custom Shop Classic 70 was the "Ultimate Classic," produced around 2005-2006 (also LH) with a case and factory letter, for MRSP of $3000.
Here is what the Winchester historical models page says (sorry, I could not align the columns):
The Custom Ultimate takes a Model 70 to the next level. A Controlled Round Feed action with stout one-piece steel floorplate and trigger guard, in either blued or stainless steel is the foundation. Add an impressive list of hand-crowned match-grade Krieger� barrel options including round, fluted round or full tapered octagon. A fancy-grade American walnut stock featuring slim styling, a rounded fore-end, reverse comb and inletted swivel bases completes the vision. It�s offered in either blued or stainless steel.

They are beautiful and should shoot, with all the custom work. I have seen some offered and eventually sold after many months for up to $5000. I would not pay that for this one, but that is just me.
