I fry them, brine/smoke them, grill them, grind them and make meatballs and have even used them to make sausage. I get a kick out of the people that say they don't like wild turkey. I've never had a bad one regardless of where they came from.

The fried version similar to Pullit's description is a crowd pleaser as are the grilled poppers or kabobs with bacon/jalapeno.
