Boil them, peel the meat, sear em in a cast iron skillet, with chopped onions, taco seasonings, cilantro, etc. Then, roll em up in big tortilla shells, along with your favorite tex/mex sauce and bake em in the oven. Add cheese to the top.....waa laa squirrel enchiladas!
.....a little cummin added to the meat helps too...
