Can do the same with most any leftover fish. One of my favorite breakfasts is a couple of salmon cakes, couple eggs runny side up and a pile of home fries.

After she passed, I'd make them for Dad once in a while. He liked them and it was about the only fish he'd eat. I still make 'em for myself every now and then, for the memories, I guess.
