My kid's comin' in from the left coast in a few weeks, and the flights are generally late arrival in the mid-west.

I was thinking of some little benedictine sandwiches (pureed cuke and onion with cream cheese and seasonings, try them). Last time I made them added in some smoked kippered herring. I'd also like to add a light salad. Could do boggy's English pea salad, which is a delight, or maybe sticking with the cuke theme and do a cucumber-dill style salad, to be accompanied by a nice cold, crisp white, probably pinot grigio...

Ideas welcome...(except from the crazy alaskan)...LOL

Have bacon fried, buy, beg, pick, some home grown maters. Late night BLT's and a cold beer or glass of milk.

Cucumber, tomato, red onion salad. Red wine vinaigrette.

A pan fried steak. With above salad and a beer.

Caprese salad (I like a little balsamic on it too)and a glass of wine.

I'll keep thinking.

Why, thank you...

um, I'm a little in the dark with this one. Up until about 6 weeks ago, she was an avowed veggie eater. Then, she tells me she ate some chicken breast. Then I heard from her sister she is having turkey breast sandwiches for lunch...so, I have to tread carefully...don't think meat is on the menu...??!!??

Toss the bacon, add avocado.

Black bean, corn, and jicama salad. See my Viva Las Vegas thread.

White bean and tuna salad?

Try my fried green tomatoes and sopas

excellent...was thinking of coring tomato, quartering not quite all the way through so it would sit opened up, then stuffing with tuna salad...eh

P.S. There won't be any cooking or frying, this needs to be in the fridge before I head to the aeroporto!

along those same lines serve shrimp salad in avocado halves with sweet grape tomatoes and baby greens on the side. Maybe pair with some small fruits and a nice white wine with some shredded cold chicken. That would also go great with your mini cuke sandwiches.

Publix bakes a great english muffin bread that also works well for toast the next day. Have them slice it thin.

A steamed artichoke with lemon butter might be nice!

Sherbert afterwards!

All of this can be prepared ahead of the visit,

Goodness what have we become??

BTW deviled eggs are now all the rage in this area. Served with pig candy and watercress!! grin

5 grain crackers with homemade Kalamata olive tapenade

Same 5 grain crackers with 1 fresh basil leaf each, pickled ginger, homemade crab or smoked fish spread, pepper jelly

.......

Oh, and Sean's cucumber, tomato, and red onion salad with olive oil and balsamic.

Can't get enough of it right now. May have something to do with the heat.

Thanks to Margarine Man for an inspiring post tonight.


Cucumbers, referee peeled and chopped. Red onion, a sweet flat one, coarsely chopped and in one inch ribbons. Preferably home grown tomatoes in a course dice. Plenty of kosher salt and fresh cracked pepper. Red wine or balsamic vinaigrette. With the red wine, maybe a little Dijon mustard and capers, but just a little.
Toss and let soak up vinaigrette for ten to twenty minutes and serve.

If she eats fish, why not a salmon mousse and instead of serving on crackers, serve on slices of cucumber? This can even be spread on toast points, etc. but the cucumber is the "low carb" version.

One of my favorite apps during holidays!
