Perfect timing[although I'm still Egg-less].

We do our family deal[son and DIL and a close friend that comes in to hunt]on Thanksgiving Eve. This year our DIL has requested a bacon wrapped loin, and this year she gets ANYTHING SHE WANTS within reason. smile
So my question is: after slow cooking w/the bacon wrap do you eat it immediately? Let it rest/slightly cool? And if you do let it rest/cool, what does that do to the bacon wrap? Soggy?
