Wife brought one home a couple of days ago and wondering if theres any ideas other then the old cheese or butter trick ??

I made this parmesan roasted cauliflower recipe last week and even the kids ate it up. I didn't have fresh thyme and substituted dried and it was fine.

To me, steamed with a squirt of fresh lemon is about as good as it gets.
Or raw with a bacon/cheese/ranch dip.

Mannlicher, are you saying they should start doing background checks on those two veggies ?
Hell, i like brussel sprouts and spinach but the wife wont touch it...guess thats why they make it such a big deal when you are a kid to eat your vegetables , so when you grow up, you are at least tolerating one !

We enjoy it most with cheese or in stir fry but I pickle about five quarts every summer and add a touch of my Scorpion pepper dust..

We usually steam it until just a bit past "tender-crisp" and put butter on it.

Lots of good optional preparations presented so far but haven't seen this yet -
Steam until well done (but not real mushy), mash as you would when making mashed potatoes. Add butter, cream cheese, some garlic, salt, pepper and parmesan cheese. We do this as a substitute for mashed potatoes.

Make a cream sauce, add some nutmeg, and then top with parmesan cheese. Bake in the oven to your liking or until the parm is bubbling.

David, it was. Real simple. Cut out the heart of the cauliflower and separated florets into smaller sizes. Toss with a little EVOO, Tony's, pepper, dried thyme, parsley and top with a big stack of shredded cheddar on top. Dropped 2 pats of butter in the baking dish with a splash of cream. Baked in oven for 45 mins covered. Remove foil. 15 mins uncovered.

Simple enough even I can do it. smile

I generally hate cauliflower but my wife has one recipe I really like:

1) Cut into small florettes
2) Toss in ziplock bag with olive oil, salt, pepper, paprika, and parmesan
3) roast in the oven

Delish!

opposite here. Wife loves eggplant, broccoli, cauliflower, brussel sprouts. I won't eat any of that stuff. I can cook it all, and do, but I won't eat any of it.

Funny I should see this thread

Just did a recipe from Lidia's Italy; Cauliflower braised in an Amatriciana Sauce.

Really simple. Basically a Marinara with Bacon or Pancetta (Prosciutto will work well as well as Guanciale or Speck)

Put the head of cauliflower in a pot with the sauce and simmer till tender. Add Chicken Stock to thin as needed during the process.
